Large Laminated Jappalachian Santoku
This knife has the classic Santoku blade shape, but much wider than usual, mated to my Jappalachian handle shape for a knife that is particularly nice for thin veggies.
The Laminated steel blade is forged from 410 stainless with an 80CRV2 core. Forge texture remains at the spine with hand-finished bevels leading to a very thin, hard edge.
The bolster is black Richlite and the sculpted handle is stabilized spalted maple, some of the very last of the wood processed for me by Nate Forosisky many years ago. This wood came to be known as "church wood" because I got it from a long dead maple tree planted in front of the first Roman Catholic Church in Bristol, Virginia.
Knife comes with a leather blade sleeve.
