Damascus Nakiri
Although nothing I do is purely traditional, I am deeply inspired by the form and function of traditional knives, and this incarnation of a Nakiri is a good example where I have taken the wide, thin vegetable slicer that is so common in Japanese kitchens and given it a wider blade and my own take on the handle.
The Woodgrain pattern damascus (80CRV2 and 15N20) blade is hard and thin, for a very sharp cutting edge. The handle is curved to naturally fit in the hand, and the facets keep it secure when it's wet. The wood is Australian Ringed gidgee, satin finished and secured with black micarta pins.
