Forged Stainless Chef

$ 1,500.00

After years of spending time with knife makers who dabble in seedy back alleys, chasing the quick highs and reaping the broken promises of stainless steels, I too, weak man that I am, have partaken of the forbidden fruit and sold my fundamentalist carbon steel birthright for a taste of the stain-free stew, and the indigestion that follows is the fire of shame. (Chew thoroughly before trying to swallow that hash of mixed metaphors).

But alas, after the obligatory disclaimer above, it's kinda nice when you live with people who don't like to clean up after the cooking, to have a knife that's just shiny year after year. The blade on the "Shame-toku" is AEB-L, which while admittedly covered in the harlotry of stain resistance, is pretty simple to sharpen - the usual bane of stainless knives. Forge texture remains at the spine with a fine hand-finish on the thinly ground bevels.

The handle is Australian Ringed Gidgee over black micarta liners. The handle is shaped so that a tiny sliver of that micarta sneaks in around the perimeter of the handle when viewed straight on.

The resulting knife has a full tapered tang, nice balance, and is a great size to be a daily go-to in your shameless, stainless, sell-out of a home.

Blade length (along cutting edge): 7.75", Overall: 12.75"
